Local Cuisine and Drink

The different cultures and races living in this country greatly influence their wide variety of cuisine. Since this is an archipelago surrounded by a vast ocean, much of its cuisine uses seafood. Fish is prepared in stews, skewered on bamboo sticks or stuffed with garlic, chillies and spices and then wrapped and cooked in banana leaves. The roussettes or huge bats are a must-try local food speciality. Most of their local food is mixed with coconut milk and citronelle or lemongrass.

A spicy meat curry is commonly served as one of the Indian influences on the island. Most dishes are served with rice. Also, there is their traditional sausage and lentil stew. Normally, meals are ideally washed down with a local lager that tends to take the sting out of the spices and chillies although they do serve fresh fruit juices for those who prefer non-alcoholic drinks.
